It’s easy to find dim sum in Singapore, but to find dim sum with finesse -- that's another challenge.
“The chef doesn’t just create the usual suspects," says expert panel member Dominic Khoo, who loves the broad strokes of innovation at Golden Peony. "There’s always interesting dim sum, such as the steamed scallop and prawn wrapped in golden-fried bean curd topped with crab roe, which are also served in exact portions.”
Like its food, Golden Peony bucked the trend years ago by deciding to serve its dim sum with a contemporary twist, and be it skill or presentation, it’s always firmly anchored itself in the fine-dining league.
The restaurant’s hush, efficient service and the elegant combination of pine wood and porcelain displays of Chinese mythology are also a far cry from your typically loud and brash dim sum eateries.
While the long-running Chinese executive chef Chung Ho Shi left earlier this year, Golden Peony continues to keep the mix creative with chef Ku Keung's use of imported herbs and spices from various parts of China.

Singapore's best dim sum restaurant -- Recommended: Imperial Treasure Super Peking Duck
A staple and highlight of most dim sum lunches is an order of Peking duck.
When Alfred Leung's Imperial Treasures group rolled out their Peking duck concept in The Paragon shopping mall, diners began making reservations for its signature dish.
Done in a traditional Beijing rather than Hong Kong manner, the skin is sliced with a generous amount of meat, and is lightly scented by the lychee wood used in the oven.
The meat however is just one part of its success. The hand-made flour crepe, which is thin and yet elastic, is a true winner.
“Finally, there is a Peking duck restaurant that lives up to the name," says Best Eats judge Shermay Lee from Shermay’s Cooking School. "There are also other dishes that are on par with the duck -- such as dim sum and standard Chinese fare.”
And if after your dim sum feast you're still hungry, ask the staff to cook up the remains of your duck in a simple salt, pepper and spice coating and you'll have an afternoon snack to nibble on.

Singapore's best dim sum restaurant -- Winner: Crystal Jade Dining IN (Vivo City)
For many, the benchmark of a good dim sum outing can be distilled into two points: good price, good quality.
In this league, Crystal Jade Dining IN (Vivo City) has done particularly well, turning out up-market dim sum dishes such as shark’s fin dumpling in soup for S$6.80, steamed radish cake with conpoy and egg white (S$3.60) or the deep-fried prawn roll with mango (S$4.50 for three pieces).
For Best Eats judge and food blogger Leslie Tay, it’s the barbecue pork buns that get his (and his kids') vote.
“The skin is so soft that you can see your teeth imprints on it," says Tay who returns once every few weeks. "The small little buns also look very good with their glistening skin.”

Sometimes, you will find letter pleading for help hidden in 'Made-in-China' products!
A letter recently found inside a box of Halloween decorations in the United States exposed some of the abuses that go on in Chinese labor camps.
But these claims are not new. In fact, similar letters surfaced in Europe as early as ten years ago.
Wang Yong, the head of the Austrian Falun Dafa Association says, in October 2002, an Austrian man discovered a letter from Guangzhou's Chatou Women's Labor Camp. It was hidden inside a napkin holder.

"When I saw the letter, I felt very heavy. All of a sudden, the distance between Austria and China disappeared. I felt exactly how terrible it is to be persecuted inside China."
Falun Dafa, also known as Falun Gong, is a Chinese meditation practice. It's been persecuted by the Chinese regime since 1999.
The letter details the torture of detained adherents, aimed at forcing them to give up the practice.
The napkin holder from Austria was sold by a local company called Eduscho. Wang says the letter discovered wasn't the only one.

"Amnesty International investigated and found that Eduscho's parent company in Germany, Tchibo, also found letters calling for help from Falun Gong practitioners detained in Chinese prisons."
A former inmate from that same Guangzhou labor camp said she had written a similar letter when she was held there for two years.

"Ten years ago, I was illegally detained because I practiced Falun Gong. I wrote a letter calling for help, and put it inside a product I made during forced labor. I hoped the international community could help. Ten years later, this illegal detention of Falun Gong adherents is still going on. I am really upset."
In its 2007 Human Rights Report on China, the US State Department cited estimations that of China's 250 thousand labor camp inmates, half are Falun Gong practitioners.
Aside from claims of torture and slave labor, there are allegations the Chinese regime has killed Falun Gong adherents for their organs.
In October 2012, 106 US Congress members signed a dear colleague letter to Secretary of State, Hillary Clinton. The letter appeals to the State Department to release any information it has on the claims of forced organ harvesting.
